Fresh Thyme leader discusses store redesign

Fresh Thyme Market unveiled a redesigned store in Downers Grove, Illinois, aiming to strengthen its focus on fresh, organic, and health-oriented products. The update, announced last month by company president Liz Zolcak, mirrors a wider industry trend where specialty grocers refine their layouts to match changing shopper habits.

Zolcak explained that customer feedback shaped the changes, which were intended to make shopping more enjoyable and efficient. The Downers Grove location now includes clearer signage, a larger natural living section, and more educational tools available both in-store and online. New sampling stations encourage customers to try unfamiliar products.

Updates to the produce section were especially important. The redesign helps highlight the store’s organic options while making it easier for shoppers to find private-label items and wellness solutions. Adjustments to aisle flow and product placement also help staff work more smoothly.

The company chose a quiet approach to the renovation. Work finished in a few weeks without closing the store, avoiding major disruptions. Zolcak noted that no staffing changes occurred, though the updates were meant to help employees work more effectively.

“We aimed to create a shopping experience that feels natural and enjoyable while also simplifying daily tasks for our team,” she said. “Better product placement and shelf organization help staff maintain the quality customers expect.”

The redesign coincides with an expansion of Fresh Thyme’s MyThyme Rewards program. Members earn 10 points per dollar spent, redeemable for discounts. The program also provides digital coupons, birthday rewards, and special promotions, including bonus-point events.

Zolcak stated that the company is still assessing the Downers Grove store’s performance before deciding on wider changes. “We’re studying which updates worked best,” she said. “No firm plans exist yet, but we’ll use these results to guide future decisions.”

The move follows similar efforts by other specialty grocers. Sprouts Farmers Market has adopted smaller store formats, while Whole Foods introduced its Daily Shop concept for urban areas. Both chains have focused on convenience and carefully selected products as in-person grocery shopping remains popular.

Fresh Thyme continues to balance discovery with practicality. The Downers Grove store now offers more room for seasonal and wellness items, reinforcing its role as a go-to spot for health-focused shoppers. Whether these changes will spread to other locations is still uncertain.

The grocer remains committed to its core products. “Fresh foods and produce define the Fresh Thyme experience,” Zolcak said. “This update ensures those items—and their stories—stand out.”
